Defne would return from the market with a new ingredient, and Eren would try something with it in the kitchen. Weekend dinners soon became a habit. More chairs were pulled up each time; the conversation continued long after the food was gone.
One evening, they decided to share those dinners with more people. They found an old house on a quiet city street and made it their own. They chose wooden tables and opened the kitchen to the dining room. The first menu came from what they found at the market that week.
VESPERA’s first evening felt much like those dinners with friends.
Seasons change
Care remains
Artichokes in spring, ripe tomatoes in summer, mushrooms as the days cool. We char vegetables, simmer sauces slowly and finish each plate with seasonal herbs.
The dining room still carries the warmth of those first dinners. There is always room to share another dish and stay at the table a little longer.
